Living Up to the Hype

Edgar’s Cantina at Safeco Field

It sounds almost too good to be true: watching a Mariners baseball game at Seattle’s Safeco field, enjoying a hand crafted Margarita created by one of Seattle’s top bartenders, noshing on an unforgettable dish by one of America’s top chefs, all with a spectacular view of the outfield, and a decent chance of snagging a home run ball. But it isn’t a fantasy – it is Centerplate’s newest creation at Safeco Field, Edgar’s Cantina, named for Mariners great Edgar Martinez. If you pick the right day, you might even see the Hall of Famer himself.

To create Edgar’s Cantina, Centerplate along with the Seattle Mariners removed 384 seats from the center field bleachers to make room for the two-level restaurant and bar. Located on the “Home Run Porch” in the outfield, Edgar’s features an innovative “Northwest Mex” menu designed by James Beard Award-winning chef Ethan Stowell. Not only regarded as one of America’s top chefs, but also an avid Mariner’s fan, Chef Stowell has created several new selections that include a Northwest take on South-of-the-Border flavors and an emphasis on fresh, local ingredients including: a basket of three fresh corn tortillas – with the choice of carne asada, carnitas, chicken or lengua (beef tongue), topped with diced onion, cilantro and cotija cheese.

But it’s not only the food and the view that takes the fan experience to new heights at Edgar’s. The cantina features a line of signature cocktails created by Seattle legend Anu Apte, owner of the Rob Roy lounge. Drinks at Edgar’s include the Zac Paloma with grapefruit soda, the .312 (Martinez’s career batting average) with Campari and soda, and the Martinez Michelada, with Mexican beer, lime, pineapple juice and a dash of cayenne pepper. For an extra shot of authenticity, these newdrinks are all made with Zac, the specialty mezcal that Martinez and business partner Gene Juarez import from Mexico.

From its iconic outfield location to the chef-inspired, locally sourced menu to the inventive hand-crafted cocktails, to the seamless tie-in with a beloved SeattleMariners legend, Edgar’s Cantina is unmatched by any stadium hospitality concept nation wide.

Revenues and attendance in the area, once a “dead zone” in the park, have exceeded expectations. The new Cantina space has been named among Seattle’s top bars; one of the city’s hottest spots for singles; and among MLB’s best food and beverage.
