When it comes to NFL Suite dining, there’s a new game in town. This season, Centerplate is introducing new menus that embrace wholesome, locally-sourced ingredients that capture current trends in great taste.
That encompasses vegan and vegetarian items inspired by one of the top vegetarian chefs in the country; an all-natural menu of traditional fan favorites, housemade desserts, and even craft cocktails.
From fan favorites to new custom creations, every dish offered here is carefully prepared using top quality ingredients, all developed with our executive chefs in partnership with a few of the country’s best resources for each recipe trend.
VEGAN with VEDGE
New for 2013, a delicious out-of-the-box option: five completely vegan choices that may change how you think about vegetarian eating. We developed these items in collaboration with two of the country’s best vegan chefs, Richard Landau and Kate Jacoby of Vedge restaurant in Philadelphia. Vedge is a one-of-a-kind, award-winning restaurant featuring a totally vegan menu, but 90% of its clientele are not vegetarians. For fans looking to change their snacking game, the menu features light snacks, hearty main courses, and even chocolate chip cookies. The dishes we selected are from the forthcoming Vedge: The Cookbook, adapted specifically for Centerplate’s suite menus.
Classic game day dishes—some sports classics, and some soon-to-be favorites—all from naturally sourced ingredients. From American pole-caught tuna to all-natural chicken, and even franks and cold cuts, everything on the menu is free of artificial colors, flavors and preservatives.
We’ve asked Tracy Obolsky, Pastry Chef at Esca in New York, to help us step up our dessert game in suites this year. Tracy is also a sports fan with very particular ideas about the kind and quality of desserts that should be available on game day. Red Velvet Whoopie Pies, butterscotch brownies, tangy lemon bars, and peanut butter pretzel cookies –all made fresh from scratch in our kitchen—highlight the homestyle dessert offerings.
There’s a national movement to drink higher quality beverages that are thoughtfully prepared with the finest ingredients, and we think the trend is perfect for suite entertaining. We worked with Graham Case, the Owner and Mixologist at Case Cocktail Consulting, LLC, to develop these special new artisan cocktail choices for suite menus. Some are inspired by nostalgia and rediscovery, and some are pure delicious innovation, but all are prepared and served in batch recipes from scratch.
